Chicken Fajitas

Serves: 4-6


Ingredients
2-3 boneless, skinless chicken breast halves
3 tbs Chicken Fajita Seasoning (I use Lisy brand)
1 green bell pepper, sliced
1/2 red bell pepper, sliced
1/2 orange bell pepper, sliced
1 onion, sliced
1 cup cheddar cheese, shredded
8 flour tortillas, warmed
oil

Step by Step Instructions
  1. Filet each chicken breast half by placing on a cutting board and slicing through with a knife parallel to the cutting board.
  2. Put the seasoning in a ziplock bag and add the chicken fillets. Shake to coat.
  3. Heat a large skillet over medium-high heat. Saute chicken fillets on each side until cooked through. Remove from heat and slice.
  4. Add peppers and onions to the skillet, stirring to absorb all the spices and oil from the chicken breast. Cook for a few minutes until vegetables are heated through.
