Zucchini Tomato Vegetable Packets

<p>A simple way to prepare a delicious combination of vegetables with little effort and no dish to wash. The foil packets can even be made ahead of time (the night before!) and refrigerated. They can be cooked in the oven, but just as easily on the grill and in about half the time.</p>

Serves: 4-6
Vegan!

Ingredients
2 small zucchini, sliced
1 medium onion, sliced
1 large tomato or 4-5 cherry tomatoes
1 T. olive oil
3/4 tsp. lemon pepper seasoning
1 T. fresh oregano (or 1/2 tsp. dried)
1/2 tsp. salt

Step by Step Instructions
  1. Preheat oven to 450 degrees, or preheat grill to medium high.
  2. Center vegetables on sheet of heavy duty aluminum foil. Drizzle with oil, and sprinkle with seasonings.
  3. Bring up foil sides, double fold top and ends to seal, making one large foil packet but leaving room for heat circulation inside.
  4. Bake for 20-25 minutes on a cookie sheet in the oven, or grill for 12-14 minutes in covered grill. Open carefully -- there will be steam! Serve and enjoy!
