Jalapeno-Pear Chutney

Serves: 5 half pints
Vegan!

Ingredients
2 pounds Pears, peeled and chopped
2 pounds Tomatoes, peeled, seeded, and chopped
2 cups Chopped onions
1 cup Finely chopped seeded jalapeno peppers
1 cup Cider vinegar
1 cup Brown sugar
4 teaspoons Fresh minced ginger root
1 to 2 teaspoons Crushed red pepper flakes
1 teaspoon Ground mustard

Step by Step Instructions
  1. Combine all of the ingredients in a Dutch oven, and bring the mixture to a boil, then reduce the heat and let the mixture simmer uncovered for 45 minutes to an hour. Stir occasionally.
  2. While the mixture is still hot, spoon it into heated half pint jars. Leave a half inch head space in each, remove any air bubbles, wipe the jar rims, and adjust lids as needed.
  3. Process the jars in a boiling water canner for 10 minutes.
