Ingredients
1 bunch bunch of collard greens, stems removed, thinly sliced
3 strips smoked bacon, diced
1/2 large onion, diced
2 cloves garlic, minced
1 T extra virgin olive oil
Salt and pepper to taste

Step by Step Instructions
  1. Heat the olive oil in a medium skillet over medium to high heat
  2. Add the bacon and cook until browned, about 3-4 mins
  3. Add the onions and cook until transparent, about 2 mins
  4. Add the garlic and cook until fragrant, about a minute
  5. Reduce the heat and add the collard greens and toss gently until the greens wilt a little, about 2 minutes
