Whipped Sweet Potatoes with Coconut and Ginger

Ingredients
6 pounds Sweet potatoes
1 stick Unsalted butter
3/4 cup Unsweetened coconut cream
1 1/2 tablespoons Fresh ginger (peeled & grated)
Kosher salt (to taste)
White pepper (to taste)
Unsweetened finely shredded coconut (for garnish)

Step by Step Instructions
  1. Preheat oven to 400 degrees. Poke the sweet potatoes with a fork several times. Bake the potatoes for 1 hour.
  2. Let the sweet potatoes cool slightly, then put them into a food processor with the butter, coconut cream, and grated ginger. Puree until smooth, then season & garnish.
