Chicken Neck Curry

Ingredients
2.2 pounds Chicken necks
1 medium sized Tomato (grated)
1 medium sized Onion (sliced)
1 Green chili pepper (sliced)
2 tablespoons Ground ginger
2 tablespoons Ground garlic
1 stem of Curry leaves
2 sticks Cinnamon
Cilantro (for garnish)
2 1/2 tablespoons Kashmiri masala spice mix
Salt (to taste)

Step by Step Instructions
  1. Braise the onions, curry leaves, and cinnamon sticks, then once they have been lightly browned, add the grated tomato, the ginger, and the garlic.
  2. Add the chicken necks and the desired amount of salt. If you want there to be more gravy in the pot/pan, add 1 cup of water.
  3. Stir to assure the ingredients are well combined, lower the heat and let cook for 15 minutes. Serve garnished with cilantro leaves.
