Chicken Korma

Ingredients
1 large Potato (or several small) (peeled and cut into 1/2-inch cubes)
1 large Onion (chopped)
1 3 inch Cinnamon stick
1 Bay leaf
3 whole Cloves
1 tablespoon Canola oil
1 pound Boneless skinless chicken breasts (cut into 1/2-inch cubes)
1 clove Garlic (minced)
1 teaspoon Curry powder
1/2 teaspoon Minced fresh gingerroot
2 medium sized Tomatoes (seeded and chopped)
1 teaspoon Salt
1/2 cup Sour cream
Hot cooked rice (for serving)

Step by Step Instructions
  1. Put the potato cubes into a small saucepan and add the water. Bring to a boil, reduce the heat, cover the saucepan, and cook for 10 to 15 minutes. Drain the water after.
  2. saute the onion, cinnamon, bay leaf and cloves in oil in a large skillet. Once the onion is tender add the chicken, garlic, curry and ginger. Cook for 1 minute, then add the tomatoes, salt and potatoes.
  3. Cover the skillet and let cook for 10 to 15 minutes. Remove the cinnamon, bay leaf, and cloves.
  4. Stir in the sour cream and serve with cooked rice.
