Roasted Pork In Garlic Tomato Sauce

Ingredients
2.2 pounds Pork shoulder or pork tenderloin (sliced into one inch thick pieces)
4 to 5 cloves Garlic (peeled & crushed)
4 tablespoons Vegetable oil
1 1/2 cups Tomato puree (or crushed)
1/2 cup Water
1/2 teaspoon Dried thyme
Salt & pepper to taste
2 or 3 Bay leaves
ADDITIONAL OPTIONAL SAUCE INGREDIENTS INCLUDE:
Onions
Rosemary
Cayenne pepper
Peppers
SUGGESTED SIDES INCLUDE:
Mashed potatoes

Step by Step Instructions
  1. Preheat oven to 400 degrees. Slice the pork into small pieces and season them with salt & pepper. Put the pork pieces into a 9 by 13 roasting pan.
  2. Put the crushed garlic and salt into a measuring cup, then add the vegetable oil one spoonful at a time and stir continuously to form a paste.
  3. Add the tomato puree, dried thyme, and water. Stir and season to taste with salt & pepper.
  4. Pour the tomato sauce over the pork slices and ensure they are well covered by it. Add the bay leaves to the pan.
  5. Cover the roasting pan with aluminum foil and bake for 45 minutes. Remove the foil and bake for 15 more minutes.
