Homemade Granola

<p>This is a wonderful granola recipe made from almost all <span class="caps">CSA</span> Farmer&#8217;s Market ingredients. Stay away from unhealthy preservatives and make your own&#8212;its amazing!</p>

Serves: 8-10
Vegan!

Ingredients
6 cups Whole oats or quick oats (I like quick oats better!)
3/4 tea salt
3 tbsp vanilla
2 cups Whole wheat flour
1.5 cups Honey and/or Maple Syurp
2/3 cup olive oil or safflower oil
1 cup dried tart cherries
1 cup chopped walnuts (optional)

Step by Step Instructions
  1. Mix all ingredients except for cherries and walnuts in a large bowl. I have found mixing with my hands is easier than anything else. The mixture should be crumbly, with some of it sticking together and some of it not. If its too wet, add more oats. If its too dry, add more honey/maple syurp or oil. You can taste the mixture as you go, since there are no eggs.
  2. Preheat oven to 350 degrees. Spread the mixture out on two cookie sheets and bake for 25 minutes. Halfway through baking, flip the mixture over--it should start browning.
  3. Let cool and enjoy! You can store this in a jar for a month or so.
