Holiday Candied Acorn Squash

Serves: 4-6 servings
Vegetarian!

Ingredients
2-3 medium acorn squash
1/3 cup brown sugar
2 tbsp maple syrup
2 tbsp softened butter
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg

Step by Step Instructions
  1. Preheat oven to 350F. Cut squash in ½ and remove seeds. Place cut side up in a roasting pan.
  2. Roast covered for 30 min. Mix together remaining ingredients. Spoon sugar mixture into squash and continue roasting uncovered for another 20 min. or until squash is tender.
