For those of you who have been with the Market for a while, I am sure you remember the great produce we were always offered by Burnell Farms! The great news is Tammy and William will be re-joining the Market for the Winter Season. Although they do not have items listed this week; Tammy will be brining:
Romaine Lettuce
Huge heads of Savoy Cabbage
Cauliflower
Broccoli
that will be on the Farmers’ Sale Table at each Market! I suspect that these offerings will sell out very quickly, so plan on getting to Market pickup EARLY to snag what you would like!
Marie of Bakery on Brooks, our marvelous Gluten Free Baker will have offerings on the Farmers’ Sale Table including her new item – Gluten Free Pancake Mix (complete with recipe!) I know I will definitely be grabbing one of those — as I am sure Sarah will also! Don’t miss out! The Pancake Mix will be listed in Marie’s offerings on the Market menu next week!
After a stressful holiday baking time, Dabrielle and husband Bruce are heading down to Florida for some R & R and to help their daughter move! Tortillas, Pumpernickel and Challah will not be available for the next 2 weeks. If you want some, place your order this week and freeze so you have those goodies while they are gone. Their very capable Baker son, Brandon will be handling the Bakery while they are walking the beach, drinking Pina Coladas and moving daughter!

HARD FREEZE HURT CROPS…Sharing this message from one of the BEST growers to show how hard our farmers work and the RISKS they take in bringing fresh, local produce to our community each season…
“I lost turnips and broccoli and siberian kale on the first night (Jan. 7) but last night (Jan. 8) hit me even harder all 300 heads of lettuce, cauliflower, radishes – GONE – I will not know about cabbage for a couple days i am hoping that some of the younger leaf lettuce will rebound and maybe some of the broccoli will produce side shoots in a week the only thing I can promise for next week is vates curly kale -5 and butternut-5 hopefully warmer weather will bring out collards young cabbage and younger broccoli. Thats what you call taking a hard punch! I will start replanting tomorrow and cutting back lettuce.” So VERY GRATEFUL for our HARD WORKING growers!

Farm to Table Recipes
Chili
1 to 2 tablespoons oil
1 pound sirloin, cubed, grass fed, grass finished
1 pound ground meat, grass fed, grass finished
1 large onion, finely chopped
1 Bottle of beer
1 14.5 ounce can diced tomatoes
1 cup coffee (strong is best)
1 tablespoon tomato paste
1 tablespoon chili sauce
1 tablespoon cocoa powder
1/2 finely chopped chili of choice
1/4 cup brown sugar
1 tablespoon heaping of cumin
1 teaspoon heaping of coriander
1 teaspoon cayenne pepper
1 teaspoon salt
2 15 ounce cans kidney beans
1 15 ounce cans white beans
5 large carrots, chopped into discs (OPTIONAL)
In large stock pot or dutch oven, heat oil over med. flame and brown meat, sirloin chunks first then ground. When meat is lightly browned, throw on the onions. Take two large sips from the beer. Add remaining beer plus, tomatoes, coffee and tomato paste. Add sugar, spices and kidney beans. Reduce flame to low and let simmer for an hour. Add white beans and carrots simmer for another hour or two; longer will be better. Season as needed.

Joyful Noise Acres Farm: Ordering ends at 8:00 tonight.
Please place your orders for this week before 8:00 tonight. Pick up is on Wednesday from12-4 at the farm. Some items are available for drop-off this Tuesday in Cumming at Grace Chapel Church of Christ.
Our favorite herbalist has been busy and has a new batch of Elderberry Syrup ready. Good Shepherd Herbals will be delivering the end of January so place your orders now. This syrup is so beneficial when treating many health concerns but is a great maintenance herb also. With all the colds and flu going around, it is a benefit to keep the immune system boosted.
Thank you to all that participated in the Sourdough bread baking class. It was fun and filling and if there are any questions, please ask.
Our next class is February 7th, Fermented and Cultured Vegetables. Many of you tried the Cultured Cashew Spread (taste explosion), now is the time to learn more about culturing and fermenting vegetables for the numerous health benefits and flavor profiles. This class will be taught by our favorite market Chef, Marty Martinez. Your vegetables will taste good, be good for you and you will learn how to use them on a daily basis.

Recipes
Garlicky White Bean Soup with Dark Greens
from “Ladled” by Kimberly Harris
2 lbs (4 and 2/3c) White beans
12 cups filtered water or homemade stock/broth of your choice
2 garlic cloves smashed and peeled
3 bay leaves
1/4 c + 2Tbsp olive oil
4 cups baby spinach (or kale, chard, or other dark green)
1/4 c tomato paste
3 tsp dried oregano
6 garlic cloves, peeled and minced
salt and pepper
1. Soak beans in large bowl filled with warm water 12-24 hours
2. Rince and drain beans, add to a large pot.
3. Add the water/broth, smashed garlic, bay, and 2 Tbsp olive oil to the pot.
4. Bring to boil and turn to low, simmer until soft and tender. ~1.5 hours
5. Wash and drain spinach, or wash and chop greens like kale. Add to soup and simmer to soften.
6. In a small saucepan, heat 1/4c olive oil, add tomato paste, oregano, and 6 garlic cloves. Stir and cook until garlic has softened but not turned brown. Add to beans and stir.
7. Salt and pepper to taste
